











“안녕하세요. Good evening. It is a great pleasure being here with you all. My name is Son. I am a chef who has prepared tonight’s dinner to make this wonderful evening a little more meaningful.
Knowing that this gathering brings together people who cherish and appreciate art, I gave a great deal of thought to what kind of cuisine would be most fitting for this evening.
I believe that art begins with a proper understanding of and respect for tradition. With that in mind, we have prepared Korean cuisine in its most traditional forms.
The first course—an opening offering—is already set before you; it features a variety of bite-sized delicacies arranged in a vase created by artist Ki-jo Lee.
The second course will be presented wrapped in a ‘bojagi’ - a traditional Korean wrapping cloth symbolizing the act of wrapping up good fortune and passing it on - showcases dishes rich in seasonal Korean ingredients. Please enjoy these alongside the two types of traditional Korean sool, rice wine, we have carefully selected for you.
For the third course, we have prepared a meal served in the quintessential Korean style. This includes ‘goldongban’ a dish featuring nineteen ingredients that serves as the prototype for modern ‘bibimbap’ - accompanied by pine mushroom soup, white kimchi, and a selection of carefully plated side dishes.
Finally, we will conclude with a selection of small traditional Korean confections, ‘hangwa’, including rice cakes and sweets made with new-crop rice that we have freshly milled in-house.
It is my sincere hope that this gathering, attended by guests from diverse cultural backgrounds, will serveas an opportunity to share the beauty of Korea with you. We have prepared a Korean meal based on the belief that what is most authentically Korean holds the greatest global appeal.
Under the guidance and supervision of my mentor, Chef Myeong-hwan Seo, we have curated these dishes in the hope that you will experience the beauty of Korean cuisine—an elegance that is understated yet deeply resonant.
